Mix together tamarind pulp and water, in a large bowl. Using your hand, squeeze the pulp to allow the water to mix and create a thick sour liquid of tamarind pulp juice. Strain this liquid through a sieve and bring it to the boil to kill all impurities. Boil for about 10 minutes and strain this liquid through a fine mesh strainer and reserve for later use.</TD></TR><TR><TD width="59%"> 2. Make sugar syrup by boiling together water and sugar until all the sugar has melted. Cool and keep the syrup aside for later use.</TD></TR><TR><TD width="59%"> 3. To make sherbet, mix together tamarind juice, sugar syrup and cold water and place this mix in an ice cream machine and churn until the liquid turns to ice.</TD></TR></TBODY></TABLE></TD></TR></TBODY></TABLE>
